Comforting Quinoa and Lentil Stew




(dairy & gluten free) 



1 medium onion

2 tbsp of olive oil

1/2 can of of tomato paste

1 tbsp of oregano

1 can of lentils

900ml of chicken broth

2 cups of water

1 cup of uncooked quinoa

1 lemon





1) finely chop onion

2) fry onions in olive oil until golden

3) add tomato paste and oregano continue to fry for a few seconds

4) drain lentils and add to the pot

5) add uncooked quinoa, water and chicken broth

6) add salt and pepper to match your taste

7) bring to boil for 5-7 minutes then reduce to simmer

9) let simmer until quinoa is cooked

10) serve with the juice of a lemon
