Refreshing Salad with a Protein Kick 

(gluten free and dairy free)

Ingredients:

1 carton of grape tomatoes

1 whole cucumber

1 avocado

Red wine vinegar

Olive oil

½ cup of uncooked quinoa

Salt

Pepper

A handful of parsley

Black sesame seed

Process:

  1. Cook quinoa and let cool
  2. Chop grape tomatoes, cucumber, avocado and parsley
  3. Combine all ingredients into a salad bowl
  4. Add red wine vinegar and olive oil to your liking
  5. Add salts and pepper
  6. Add 2 tbsp of black sesame seed
